    Sliced is right!

Thanks JAKE. My new PBAXL is killing it and running smooth so far. The lighter smoke lets the rub standout more.

    Sliced is right!

Yesterday was sausage grind day on a pork butt so I’m set with 2.5# each of breakfast and zesty Italian. The money muscle end gets special treatment cause’ it’s too good to grind. Rubbed it down with my own SM clone rub and then overnight in the fridge. Tossed it on the pellet grill with Bear...

Anyone make the switch from charcoal? Experiences?

I added a clearance priced Pit Boss Austin XL to my arsenal of Kettles. Had it not been drastically marked down I could live without it. I was happy to smoke and grill on the SnS 26” and use the 22” for rotisserie. I’m not ready to go full pellet yet. The pellet grill has its quirks and gives a...

    Hula Hog Shots

Very tasty. Bunny likes Hawaiian pizza. I don’t but drew inspiration from that. You can’t smoke these very long or the ham will get tough. I pulled them when just heated and cheese melted. Sweet onion is a must.

    For Lovers of Raccoons

Raccoons are pool cage climbing attic crashers. They are viscous and smell bad. Male raccoons are murderers that attack and kill their young. The only good raccoons are those that end up as roadkill.

Replenishing charcoal in slow ‘n sear

I fill my SnS xl with briquettes and add about a dozen fully lit to one corner. This will give me about 5-6 hrs. For briskets and butts that’s when I pull the meat, knock all the ash down and add charcoal. While I’m wrapping the meat the coals are catching and the meat goes back on til done...

Might suggest you visit the Pit Boss forums. The new WiFi controllers on their latest cookers are talked about........a lot. I do however love my Walmart clearance Austin XL.

    Which pellets leave less ash...????

If you imagine that the GMG pellets leave more ash than Lumberjack by observation, then it’s probably true. LJ pellets are widely concidered top line pellets. Perhaps your guru pellet salesman has steered you towards an inferior pellet in an attempt to move unsold inventory. Just my thought...

    Recommendation for Pellet Grills

Check with Brickseek for Austin XLs on clearance at Walmart. I got one a couple weeks ago. It works great and the food tastes acceptably smokey. $300-$350 in our area and they’re going fast.
