    Wood chip can question

I'd replace it, if it stank. (Stunk is a dead skunk ) Some just use foil and no can. Kinda sucks that you can't get coffee in a "can" much.........peanuts are in a can though. BTW, I'll let you drive my tractor if you'll let me drive you "bike". Also, we'll baby sit that cute little...

It's right in there isn't it, big flat or thin packer. Same rules apply I guess. Been a VERY long time since I did a flat.

    Danger Zone???

Sorry Rich, but I disagree w/temps. I smoke'm at 225, 225 is grate temp. I've done them fast(and chix) and I've done them slow(225). A brine and a slow smoke while controll'n smoke(I have a pellet smoker, can't really control that) is the way to go. Skin won't be crisp, though, but I've...

Brisket Times What a Ride! HELP!

Q, your do'n fine. Put that probe in the middle of the flat, sounds like it is just one big flat.....then again it could be a small packer. The meat temp on a brisket(and butt) is JUST a guide line. When you can poke that therm into the flat and it feels like butter, your home! You can't...

    Competition Cooking

I haven't competed but have read alot about it. You can make what you want, just ribs if you want. They vote for the best in each meat, then the best overall. You can have a 1 man team, no problem. I don't know if there is a limit to how many you can have, but I assume as many as can fit...

    Dumb Dog

Don't sweat it SteevieG. Just know your pit temp and you'll be fine. Keep it where you want it, or about 225. Check your butt when you think it will be about 160*, then foil for a few hrs and just check the bone then. When that bone wants to pull right out it is ready. You'll learn what it...

OK to smoke ribs w/o mustard?

I'm w/ Bubba. I use worchest sauce to help my rub on everything. I'm not crazy for the mustard idea, actually don't use it at all anymore. You'll do fine. Good luck!

    Separating a Brisket

Great info Hawk! FWIW, I wouldn't separate BEFORE the smoke. If you want a flat, buy a flat, point, buy a point. If you buy a packer and trim as in the link you'll throw alot of fat away, fat you paid for. It is also very easy to separate after the smoke, easier in my opinion. You'll still...
