Good looking bacon there. Many people have trouble keeping the cherry pellets lit, including me. Now I mix cherry with something else, like hickory, about 50/50.
When I used mine I would start the controller at full "speed" then when the chips were smoking I'd turn it down about half way. That kept the chips smoldering without burning through them too quickly. (Since I went to the AMAZEN tray and mailbox mod I haven't used the slow smoker.)
I plan on making this recipe this week. Couple questions: We like it a bit spicy. If I increase the black pepper from 4 to 5ml and increase the cayenne from 3 to 5ml would that be too much or not enough? Secondly, I don't have buttermilk powder but I do have encapsulated citric acid I could...
Note the one in the picture has the bands pinned to the wood slats near the cut. That would have to be done otherwise the bands would just fall off when cut and the rest of the barrel would just become a pile of slats.
