I've noticed a lot of advice being given out about higher temps than what I do Q. I pretty constantly smoke at between 200-250 for everything from pork to birds to beef. I have been completely satisfied with the results that I get....Is this dangerous???

I just opened and starting using my 2nd bag yesterday. The first bag I liked, nice big pieces, natural looking. Second bag, looks like scrap lumber and I literally had a 1x6 pc that was about 6-8 inches long! Some pieces seem not completely charred...Seems like it did burn fairly fast.

Shark's are a blast to catch. Was it a bonnethead that are so prevalent in our bay? I am assuming that chum bag hasn't been used yet or you're not using oily chum, cause that stink doesn't ever come off anything ever. I need to start getting back out on the yak again.
I just found a "Meat Store" in my area too. I haven't been inside yet but the sign outside said "exotic meats including bison, ostrich etc...This could get expensive.
I tossed a butt in my crock pot one time because I had to go with friends to float down a spring and I only had it to about 145 degrees...It ended up being in the crock pot for nearly 12 hours and came out nasty in my opinion. Everyone else loved it but to me it was way too mushy...DON'T DO IT!!!
I've been finding what appears to be some kind of maple at the yard waste recycling drop off...it seems to produce a light almost sweet smoke. I hope others give some advice because I've been wondering too...
