    Venison Meatloaf Fattie

OK, I admit I don't know the right place to post this one but "Fatties" seemed as good as any other option. This was an experiment that once it got started, turned into a bigger experiment. I thought I had a about a pound and a half of ground venison in the freezer and planned to make a pretty...

    Ruined Pork Butt

Big Blue, I think at one time or another, we have all had that surprise. IMO, the first rule is don't trust time, its always almost wrong. My second rule is trust the temp only slightly more. Smoking 81b Brisket tomorrow - questions...

I agree 100% with dirtsailor, don't turn you oven on! I did the first time I used it and even at the lowest temp, it seemed to over-cook the brisket and it was much better done than when I pulled it out of the smoker. Scott

Smoked bone-in leg of lamb, South African style

Ed, Both the lamb and duck look wonderful. I do lamb every so often but haven't done duck yet so, I need to try. May you have a happy and blessed Passover. Scott Hampton, VA

    Smoked Chicken Cordon Bleu

Thanks Albert. I use a free application called Evernote that you can just right click on the web page and save it to their cloud. Evernote is free and has versions for the PC, Mac, Android phones and iPhones. There is also a ungraded version that you can pay for but for 90% of the people out...

    Flank Steak with Smoked Paprika

Think I've found my new favorite spice -- Smoked Paprika!. Took a 2.8 lb flank steak, rubbed with EVOO then coated first with Smoked Paprika, then Montreal Steak Seasoning.   Wrapped it up and into the frig for about 3-4 hours. Put it on the grill at medium high for 6 minutes on one side...
