Here it goes, 1st time spare ribs with some chicken

I meant to mention in an earlier post about the mop. As I mentioned earlier I sort of did a braise on the rib trimmings. Those turned out really good. I braised them in apple juice, sweet baby rays, hot sauce, worchesterschire sauce, and vinager. Normal when I make a mop I use a genorous...

Your first smoke is very nice. I did a pork loin for my 1st smoke and it was OK, but your brisket looks really good. Congrats

I was looking for something different to smoke.

Since your buying count me in! How would it feel to smoke meat that actually cost more than the smoker itself? forluvofsmoke said it right... That is just insane!!

    Pork loin on now

I am by no means an expert on the smoker but I did see a thread where someone brought it up to temp and pulled it. I would assume that you would need to get the internal temp up to 195 at least and then I don't see why it wouldn't pull. I have only done the pork loin once and it turned out good...

20 Hours Until Deadline And No Experience. Am I Out Of Luck? (Brisket & Spare Ribs)

Also, if you are only 20 hours from deadline it is important to know that the brisket could take anywhere from 8-14 hours to get done. I know that is not a very specific cook time but meat has a mind of its own and you should prepare just in case it takes a long time to get that brisket done...

    I need a little assistance...

The ECB is as its name implies pretty cheap to buy. I have one that I still use and I have produced some great food using it. I also have a brinkman SnP. This was bought at a yard sale for for next to nothing and with a little clean-up looks and works great. So if you didn't want to spend much...
