The bonelss butt shouldn't cook to much differently as far as times go. Sounds like your going to pack your ECB plum full!!! Good luck and dont forget the QVIEW!!!!

I love BBQ, if I was going to produce a BBQ show it would be very different than this show. However, it is the only BBQ show that I know of and I will keep watching it, if for no other reason than just to support the ratings of a show about BBQ so that maybe oneday in the future...
I didn't know CSR's came from the shoulder. If that is the case i could just buy a small butt for 6 or 7 bucks and cut up my own CSR's, no? I like cooking CSR's be cause they are cheap and easy but always good. I just cook at 240* and follow the 2-2-1 method. They are always falling apart...
I always smoke my briskets to an internal temp of at least 195. An internal temp of 180 probably won't be the most tender and savory brisket. getting an 11 pounder to and internal of 195 may take some time, even cut in half. be prepared for 11-15 hours.

The cupcake pan has got to hinder some of the good smokey BBQ flavor from getting into the chicken doesn't it...? Thats probably why Myron isn't winning much in chicken.

This worked great with the ECB because both halves are made by brinkman. I really hope you all's char-grill water smoker works too. I am sure you can force it . Please post some pics here if you get'em together.
