A needle valve will work on any gas burner. Simply install it in the gas line, turn on the valve on the smoker on to high and control the flame with the needle valve. It's that simple.
You don't need an expensive control on a gas burner. Simply add a needle valve in the gas line. Do a search above for lots of needle valve installations.

The metal does not have to be heavy gauge. Any will do. Cheap flashing at a big box store will work fine and easy to cut with a pair of metal shears. I used self tapping metal screws to install the plates. Mine are light weight aluminum simply because I had it.

Fuzzy, the one pictured above will do just what you need. The needle valve always goes between the tank regulator and the burner in the low pressure line.
I see no reason to replace the hose that came with the smoker unless it is damaged. It seems some folks tend to go overboard thinking safety. Nothing wrong with that way of thinking.
The needle valve can go anywhere between the regulator and burner. Just turn on the built in gas valve to high and control the flame with the needle valve. You will be surprised how well you can regulate the CC temperature. Mine will stay within 2-3 degrees all day. good luck
