OK my turn. I use only lump! My reason is because of the added chemicals in briquettes. I use a lump base and add a little oak in the middle of it. Then I use hickory/pecan/mesquite etc.. for my smoke! little to no chemicals!!!!
I use a side mount fire box.
That type of probe is used for getting a quick temp. its not designed to be put in an oven and left for a long period. it's a calibratedable thermometer as well and i would not trust it holding temp in that kind of situation.

Crap that sucks! I thought that if my bones were bare and sauce was in my ear with lips a smacking and a whole roll of paper napkins I was doing good! LMAO!!
