    First Butt. Help!!

    I charted the temps on the 8.5# butt I smoked yesterday.  Your temp at 5 hours seems inline, but I was cooking at 275-ish.  Here's my chart from yesterday: 7 AM - 45 degrees8 AM - 55 degrees9 AM - 97 degrees10 AM - 127 degrees11 AM - 153 degrees (4 hours in, at 275-ish)12 Noon - 181 degrees I...

    Happy 4th - First Shoulder

Rip, the rub is one I use for pretty much all meats.  Here you go: 1 tbsp. paprika1 tbsp. black pepper1 tbsp. salt1 tbsp. chili powder1 tbsp. sugar (dark brown for pork, light brown for poultry, table sugar for beef... and cut the amount in half for beef)1 tsp. garlic powder1 tsp. onion powder...

And the completed product.  Decent bark and smoke ring.  Very tender but still reasonably "firm".  Nice flavor, balanced without any cayenne bite (I have sauces for that!)

    Happy 4th - First Shoulder

Internal temp hit 201 and I pulled it.  It's wrapped up in three layers of beach towels (the pan is too wide for my cooler) and it's resting.  Temp has climbed a bit of course... 205 now... Checking back, I'm guestimating that it cooked between 275 and 300 degrees.  Although the wireless...

    Happy 4th - First Shoulder

At 3.5 hours the internal temp hit 140.  I opened the smoker to a very nice looking bark! I moved the shoulder to an aluminum pan and double-wrapped it.  It's back on the smoker for now, until the charcoal runs out (probably two hours.)  At that point I'll transfer it to the kitchen oven to...

    Happy 4th - First Shoulder

Two hours in.  I'm a little frustrated, Gambit's temp is fluctuating quite a bit.  Pleas note: this is NOT the fault of the Cajun Bandit, this is due to my inexperience in setting up the charcoal.  I'm getting temperature spikes when the charcoal meets one of the wood chunks.  Maybe next time...

    Happy 4th - First Shoulder

Good morning!  Tomorrow I am taking a pork shoulder to my in-laws for the 4th, so I started cooking... well... yesterday .  I have two smokers: my Cajun Bandit modified Weber OTG, and a Smoke Hollow No. 6 gasser.  I work from home, and my office is next to the patio, so I decided to use the...

    Pork Tenderloin

This happens to me too.  If I want to smoke low-n-slow, my wife uses some poultry string and ties the halves together.  Otherwise I simply marinade them two halves, then grill them like a steak.

    Pork Shoulder - sanity check

Thanks for the replies... but now I'm wondering the opposite question: what if the smoke finishes early?  How long can I let the meat rest wrapped up in the cooler?  (Please note I don't mean due to self-control issues  ).

    Pork Shoulder - sanity check

Good afternoon!  I'm thinking about smoking a pork shoulder on July 4th, but there are a couple of speedbumps I have to deal with: I have to take the finished (and resting) product to my in-laws' house that afternoon, which is an hour away.  And my wife will want to leave as early in the...
