Good for you for doing the research first. to be quite honest your chicken breast may or may not turn out satisfactory. Don't blame that on your smoker, your skill or on the chicken breast.
Honestly chicken breast is best cured then smoked.
give your smoker and all of your knowledge and...
Thanks! When I bought my new place, the old owner left me with a broken window. I decided to make lemonade out of lemons.
Here's what the outside looks like.
Yes. As I had installed the exhaust system on the MES I no longer needed the damper on the top. So I just removed it.
I don't know I would guess about 3/4 of an inch? I just used the largest of my step bits and drilled all the way through. It's just one of those average step bits that you get...
Ok...
1) 6x8 pellet tray for the mailbox.
2) galvanized box is more than fine. As you said, not enough heat generated to matter. The tray will actually build up layers of creosote on the inside of the box as time goes on.
3) yes, unit probe sucks. Generally. I have the inkbird 4x and 6x...
Yeah, I think that's what we all thought! It's funny though, it seems like some people have zero issues with the software. Guess we're not those people.
I enjoy cooking with reapers better that ghost peppers. Ghost peppers have their place for sure, but they can leave an unappealing flavor in certain applications. The reaper doesn't tend to leave off flavors in my experience anyways.

However, a member recently suggested the SOLIS THERMO app. It does work considerably better than the other apps I've found for the BT thermos.
So, re: your now warped lid:
Add a block or two to extend your chimney. This will increase draft.
Get yourself a 5 gallon bucket full of sand. Remove your metal lid and shovel sand on top of the blocks where the lid sits. Place lid on top of sand. This will fill and close the warped area.
I run this exact design. Let me give you some tips that will save you some trouble.
First you need to fill all of that block with sand otherwise you're going to be burning a ton more wood.
Second get a quarter inch thick steel plate just to cover the fire box. It would be entirely too heavy if...
225 is not a magic number. Crank it up to 275 or 300 as a policy. You will never notice the difference, except for all the time you saved and extra sleep you got
I would fire it up before making the mods (actually before painting it even). That way you can test and see if and where the leaks are. I'm assuming that's what most of your mods are based around is leaks.
8 to 10 isn't too bad. 24 hours is better. if you did let it gas off a bit then I would say your problem is more likely temperature as was mentioned above.
Cold smoking is a game all in its own
