Bad day to be a pig

Have a work lunch tomorrow for the last day (it was a summer job before school starts and I have to go back to teaching). Since I broke my wrist and can't work I volunteered to smoke some pork. I got one Boston Butt and one picnic for that and the family asked me to do another picnic that we...

    Mustard on pork butt?

Mustards primary ingredient is water. I have a problem just putting water on my meat, even though I know the mustard is essentially just that. I've also done molasses but couldn't tell a difference.

Trying to figure what I did wrong with my 1st Brisket

I'm running a Brinkman offset of my brothers and can answer the last question. YES! Those smokers love charcoal and eat it faster then Rosie O'Donnell eats donuts. I went through a bag and a half last time I smoked a shoulder.

    Essential kitchen tools?

My amazon wishlist gets bigger every week. I personally like glass mixing bowls. Less likely to react to acidic foods. A microplane is very handy for zesting citrus rinds. Rubber spatulas to scrape the bowls clean, a spice grinder, and most importantly high quality knives.

    Pork shoulder help!

If they are stacked I highly doubt they were the same temp when you pulled, but I could be wrong. In my vertical smoker, unless I rotate them, my top shoulder will be 15-20* behind the bottom one. If you only checked the bottom one this could explain it. Shoulders don't pull well until they get...

1st time and it was worth it!

The weave seems a little spread out but that can be a good thing. I'm thinking I'll start spreading mine out a little as well. Tastes as good and half the price.

Experimental Fire Water!!! AKA Acid Rain!

I don't have room in my freezer to store all my Charmin. I can only imagine how much that would burn coming and going.

Experimental Fire Water!!! AKA Acid Rain!

I JUST made a batch using fresh Serrano peppers as our plants are exploding with fruit right now.  Should i have dried them first or is fresh fine? PS, it's a double batch and I used 20 peppers.  They are pretty hot this year so it should burn.

    Confused About Brisket

Almost two years ago, beef prices sky rocketed. My parents raise a couple of beef and they use to buy calves at under $0.50/lb but the newest were $1.29. That's for odd breed that nobody wants. Angus, herford, and the other standard breeds are well over $2/lb. Meat prices have reflected this...

seems like it depends on where you live

If you know anything about the rally, you should know beer is aplenty. That's why they started doing it. Have the party at the hotel do that guests weren't riding drunk. It helps a lot, plus it's a ton of fun.

seems like it depends on where you live

I worked at a hotel in Rapid City, SD that has a free "BBQ" every night during the Sturgis motorcycle rally and it was just hotdogs and hamburgers. I would make sure to tell the guests it was just grilling by the pool but the manager still insists she is doing a BBQ.

What to do with a broken arm?

My salmon (see avatar) always turns out good.  I think I'll leave the cod for frying.  Nuts should be interesting.

    Staying at a "100% smoke-free": hotel

I worked nights at a hotel for a couple years. We had a grill available for the guests, and occasionally (twice a week minimum) I'd use it. The guys that would stay with us for long periods of time loved it. People could also bring their own grills or outdoor cookers. I'm sure they would allow...

What to do with a broken arm?

There are tuning plates in the smoker but I on purpose didn't use them so that I could use the different temps. You can see that the fish was as far left as possible. I'd rather it be even cooler then it was but it was 220*. The salt just went in the middle until everything else was done. I...

What to do with a broken arm?

Thanks Case. It was fun trying new things. Now I'm thinking about nuts. Anything different.
