    Found out last minute that I have friends coming over for dinner.  Ran to get two tri tips and have them in the smoker.  Going a little hotter than 225 because I'm short on time.  Fingers crossed!

    It really is.  Practice on your "throwaway knives" first.  Bob Kramer recommends a 12 degree angle which does great for me.  I've been super happy with my results so far.

    The final product was good, but not great.  Tender enough, and the flavor was definitely there, but in comparison to the pork ribs I make (spare ribs or extra meaty baby backs) they were just okay.  I will try again, maybe with ribs I butcher myself from a prime rib roast, so they are meatier.

    Can't wait to se eit all unfold!!  I really want to build a smoker one of these days.  I have an above ground "alter" that I do whole hog on, but I really want to do a smoker one of these days.

    That looks really good!  What's the heat level on the Jalapeno cream cheese stuffing?  I'm always looking for new ways to add heat, but with flavor flavor; not just heat for the sake of heat like some of those crazy sauces that light you up.
