    I just bought a capon, day after Thanksgiving for less than the price of whole chicken, $2.68/lb. I have never had one so I couldn't resist. Check your supermarket price, you might find one at a good price.

    Microwave steak

    Seems to me people buy searing burners on their grills now to sear the outside and leave the inside rare, medium rare, or some place in between. When one microwaves a steak it is done uniform throughout, I know because my wife likes it this way, evenly done all the way through. Yuck!

    @noboundaries Yea, guilty as charged. I live 5 minutes from Costco. If I'm only going for meat, I don't even get a cart. Only one grocery store closer.

    Cut shot. Smoked for 7 hrs in lumberjack mesquite and oak In oven at 100° for 4 hrs Increased to 150 so I could go to bed, food 2 hrs. Pulled at 197, should have gone higher, just a little more tough than I expected. That can be solved the next time. Now that I know the process I can get a...

    Just took it off the smoker, temp around 145° after 7 hrs. In the oven at 200°.

    Got a late start this morning, took too much time cleaning the smoker. Haven't used it for a while because of the rain. Smoking with lumberjack mesquite pellets at 180°. After 2 hours. Will smoke until i I can't see any longer outside then will bring into the oven.

    My niece wants smoked brisket for her birthday in early January. Having never smoked one before I decided to give it a couple of test attempts to see if I can get it right before the event. Costco had prime packer briskets at $3.99/lb. We are only two here so I got a small one at 11.75...

    Curing and Smoking Pork Shanks

    I did some last year for an Octoberfest party. I smoked them for six hours at 180 on my recteq, then finished in the oven. They were delicious. I got them from a butcher so we're not salty at all. I did not brine mine. There is a brief thread here, I'm on my phone or I would post it.
