Outstanding, I am a pork guy and like the pork better, but this beef is surely worth doing again,. All vacuum sealed put away. I will serve some up for Christmas thin sliced with some cheese.
Last night I also cut up 10 lbs of pork butt and put it in Tasso Cure too. I also put two whole chickens in the slaughter house Brine ,but added cure. I will let them cure until Friday evening the smoke it all up Saturday
So work got in the way, but I got the beef going

Ok I am going to give it a try. I hit a sale tonight on Top Round London Broil and bought three packages.
Came home and mixed up 6 batch of Tasso Cure for 5 lbs of meat
Cut the Beef into 1" and 1 1/2" strips
Ended up with two bags at 5lbs each

Used some Naan bread and made some pizza last night. This stuff is fantastic.. We have been just slicing and eating , but a whole new flavor dimension when used with other food.
