Giving a test run for some homemade pastrami that I'm hoping to do for Xmas eve. It's a 15lb brisket that I cut in half. Brined for 5 days, then sat uncovered in the fridge overnight to dry out and is now in the smoker over apple chips.

New to the forum. Updating my smoker from a el cheapo brinkman charcoal to a Cuisinart propane. I’ve searched the forum for any info, but can’t find any. Anyone have any experience with one? Any hacks or mods that you can recommend? I know I need to mod the combo water/chip pan. Thanks...
