    Canadian Bacon-lot's of qview

I didn't realize you pulled the CB at 140F. I would have messed it up, but this is now on my to do list!  I love some CB. My company is moving into a new office and I was thinking about taking my flat top out there the first morning we move in and making cook-to-order breakfast for everyone as...

Can I slow These Butts Down?

At least you get a little ocean breeze (hopefully).  Here in Lexington we get all the heat and humidity, but no breeze.....arm pit of the state. I lived in Goose Creek/Hanahan for about 2 years (Navy Nuke School), so I'm pretty familiar with that area, so I feel your pain.

    Smoking a Pork Tenderloin

I did one that I used Jeff's bacon weave on about a year ago and the flavor turned out great. I wish that I had pulled it off the smoker a little earlier, and next time I don't think I will wrap it, because the bacon got a little soft.

Can I slow These Butts Down?

I would keep pushing through. The meat stays hot and ready for pulling for many hours in a cooler.  I've left a couple butts wrapped and in a cooler for 4-5 hours before pulling.....still turned out great. Then again.....after reading what Al replied that makes a lot of sense too! What part of...

    Pork butts up!

Did you do anything different than normal, or just had it all come together with a great cut and great smoke?

    Picking the right ribs.....

I stuck my head into Aldi grocery store for the first time this weekend.  They have some pretty good pricing on several items and I will be making return visits. While looking through their meat selection (a little limited) I found their ribs. They were individually wrapped racks, which I...

    Grad Party Smoke.

I've always found that most coworkers never complain when you bring in good eats for everyone the Monday after a BBQ.  I have 4-5 guys come by my desk every Friday to ask if I'm cooking over the weekend.....they want to know if they need to pack a lunch on Monday or not.

    New Boston Butts Ideas....

Would you brine your butt prior to rubbing down and injecting?  Would that be overkill to do all three?

    New Boston Butts Ideas....

I can't do Indian food.....I was in Bangalore for about 3 months back in 2013.....I got extremely sick and ever since then even the smell of Indian makes me queezy.
