I did one that I used Jeff's bacon weave on about a year ago and the flavor turned out great. I wish that I had pulled it off the smoker a little earlier, and next time I don't think I will wrap it, because the bacon got a little soft.
I would keep pushing through. The meat stays hot and ready for pulling for many hours in a cooler. I've left a couple butts wrapped and in a cooler for 4-5 hours before pulling.....still turned out great.

I've always found that most coworkers never complain when you bring in good eats for everyone the Monday after a BBQ. I have 4-5 guys come by my desk every Friday to ask if I'm cooking over the weekend.....they want to know if they need to pack a lunch on Monday or not.
