    Cheapest meat?

If you can find a packer brisket for a reasonable price, that's an option. It's still gonna cost more than most pork though. And it's a bit more of a challenge than butts. There's always pork loin too. I can get that here for $2/lb. Not much of a challenge, but good. Just watch your temps. It's...

    3 Bellies on the Smokin'-It#3

... "My point was that you don't have to abandon the bottom half of the Butt fron the BBB process. Of course there are all kinds of other things you can do with it." Yes, I know. As I already stated. We seem to be going in circles here. I make BBB with the whole butt. I've done many, MANY...

    3 Bellies on the Smokin'-It#3

BBB from any part of the butt is good! The more meaty parts are great! For people trying to eat a little better, maybe a thought. I may never buy "store bought" "bacon" again....

    Consuming Raw Pork

If I knew where the pork came from, and, of course, I trusted this source, and was scrupulously clean, I'd go for it. I've eaten dry fermented sausage and it's essentially raw. Yes, it does/did have cure #2 and salt in it. But it's still raw, it has not been cooked. Was working on a BBB...

You know you have a smoking addiction when.....

A few weeks ago, pork butts were $.99/lb. Bought 16 pork butts. About 120 lbs. I use pork butts for so many things, pulled pork, sausage, BBB. I'll be down to about 5 by the end of the week. Looking for the next sale already.

    Question about curing pork belly

Your MTQ use will be fine..4g MTQ is not a significant amount to "overdose" 5 lbs of meat. No nitrate cure IS NOT!!! They generally are sold as "natural cure" They have an uncontrollable amount of nitrate. You would likely give your friend a FAR HIGHER dose of nitrite than using the "real"...

    Hi Folks

First off, never owned a Bradley, never used a Bradley. The main complaint I've heard of with them is the puck feeding. I've HEARD they can jam up. You're also limited to the pucks made by Bradley. Other than that, for a "set and forget" I hear it's a pretty decent one.
