    1st attempt at ABTs

Nailed down two recipes: 1. Ground beef, cream cheese, sharp cheddar and our picked spicy veggie mix from the garden (carrots, onions, Serrano, jalapeño all pickled, very good heat). 2. Artichoke Hearts, cream cheese, Italian blend cheese (part, asiago, mozzarella), crispy bacon bits. #1 will...

    1st attempt at ABTs

We're going to try our first batch of ABTs today in addition to the Pork Butt. Debating the filler but we have some chorizo in the freezer. Thinking Onion/Cream cheese/Sharp Cheddar/Chorizo then wrap in thin bacon. Thoughts or advice? Going to put them on with the Pork Butt. Going to browse for...

Doing a Pork Butt here today also. Only 6lb, but we're a small unit :emoji_sunglasses: Love the MES, but I"m actively fighting the impulse to go buy a new smoker....still researching but pray for my wallet! Edit: finally got propane for my torch, so back to using the A-maze-n. Nice TBS going...

    2nd Time Snack Sticks

Thanks for the comments and apologies for the delay in reply. Edit: correct picture, can't figure out how to quickly rotate. Pretty sure we use Morton Iodized but I'd have to double check. They came out pretty well. Struggling with two aspects: spiciness and the casing sliding off and not...

    2nd Time Snack Sticks

1st Time: https://www.smokingmeatforums.com/threads/1st-time-snack-sticks.310990/ This time doing 10lbs. Taking about 1.5 lbs and doing a non-spicy portion for my son. The other 8.5lbs will be spicy (hopefully...last batch was awesome but needed lots more kick). Recipe below is for a full...

    1st Time Snack Sticks

Will close this thread out with a pic and some lessons learned: Need to add NFDM to the next set of ones from a non-premix to promote the binding of the stuffing to the skin. The Hi-Mountain casings (mahogany, your front left) seem to stick to the stuffing a notch better and also promote a...

    1st Time Snack Sticks

Since the wife can't help with those I might have some extras...you just might have to fight my kids for them LOL. Gonna give them 24 more in brown paper in the fridge then vacuum seal half for freezer and keep the rest out for snacking.

    1st Time Snack Sticks

Thanks Jck. Definitely addicted before even really tasting them. Was just a fun process to do with the wife on a weekend afternoon. I think the darker ones look plumper, perhaps because the pre-mix from Hi Mtn had a binder/moisture retention ingredient. That was the one thing we omitted from...

    1st Time Snack Sticks

Update: AMAZING The Hi Mountain casings have better snap, and overall the mixture could have used more peppers but we were just saying this is our BEST first attempt at smoking anything. They came out so freaking well. Cheers y'all!!

    1st Time Snack Sticks

For anyone who's watching....what is the purpose of the NFDM or other binder in the sticks? That's the only thing we lacked in terms of ingredients. I saw it used in some, but not in all. Is it to bind the mix together or to bind the mix to the casing? Thanks!!

    1st Time Snack Sticks

Definitely on my list to start lower and a lil' slower next time, thanks for the advice. Found a few air pockets that we'll have to watch out for next time, and I'm a tiny bit concerned that the casing didn't fuse to the meat, but we shall see. Thanks for the replies!!

About to start learning to can

Having planted our first garden this year, we got REALLY into canning. We made like 30 jars of pickles and a half dozen jars of salsa, giardinera, relish. Also a dozen or (and one big extra jar) of hot sauce. Habaneros, Jalapenos, Serranos, Tomatoes, Cukes, Lettuce (obvs we didn't can that lol)...
