    FYI, the dual channel model w/ alarm is back in stock, I bought one yesterday so I don't have to keep changing the probe on my Therma 3 between the smokehouse probe and the smoker temp probe. Plus it has min/max to keep an eye on temp fluctuations.

    Looking dang tasty bud! Mine is at 198 but I only had the one 6.5# butt. Looks like about 12 hours for me. I'm guessing with all the meat in yours it's gonna take longer with all the mass soaking up the heat. Makes sense in my head anyway, I'm no pro though..

    You're in the same boat I am then, pretty much gave up watering the lawn and trying to keep the smaller trees from giving up. It looks like Fall they've dropped so many leaves. Good to hear your gaining some temp, mine's at 190 and the cooler and towels are ready when it hits 205. Getting hungry!

    It's possible the probe on the door is reading high and your smoker temp isn't as high as as it's reading. If you have another known accurate thermometer I'd check and make sure the smoker temp is close to what the door probe reads. If the door thermometer has a probe and is removeable you could...

    Relax and have a frosty beverage, makes the time pass quicker...   I wish we'd get some rain, just not while the smoker is going. It's incredibly dry here, had a tenth of an inch in the past 3 weeks or so and 10 days over 100 in that time.

    Wow, that does seem like a long time. I put a 6.5# butt in at 5:00 am (out of the fridge for 45 min) at 230 degrees and by 11:00 am it hit 165. Lowered to 225 degrees and double wrapped, it's at 180 at 1:45 pm. Are you going by the smoker thermometer or do you have another thermometer calibrated...

    Awesome! I'm doing my first butt in the new smoker tomorrow, just did the rubdown (trying Jeff's recipe) and put in in the fridge 'till early tomorrow morning (getting up at 5:00 am to put some meat in a smoker? we must be a crazy bunch!). Hope yours comes out fantastic!

    +1 on ThermoWorks products, especially the meters with interchangeable K probes. They have every type of probe you might need including some designed for smoking and smoker air temp probes. There's a nice dual probe setup with probed (meat and air temp) but they're out of stock at the moment.
