I did a little experiment a while back and was most happy with 2-3-1 on that occasion. I've also had mixed results with some of the same methods. It definitely depends on the ribs. I did some meaty, very lean ones yesterday and ended up taking 10 hrs total after having some temp issues...
I haven't done any mods on mine except I use a big foil pan for a water pan and put it completely to the left to buffer the heat.
The first time I used it I started with a fairly small fire and then it was hard to maintain it. Now I start with a really big fire and it's easier to keep it going...
I've injected with a mixture of apple juice and beef broth and been happy with it. I've also added a little rub into the injection. I've been going to buy some of the stuff from butcherbbq but havent' done it yet.

Pulled them at 10 hrs. They're still not falling off the bone but they are nice and tender. The quality is definitely good. I think the next time I get some of these I'll try 3-3-1 or 2-3-1.
