    You can do briskets or butts at 275-300 without any worries. Sometimes low and slow doesn't fit in with the rest of the schedule. Go for it and enjoy!

    I like to brine whole chickens overnight, but that's me. The cooler idea is best, ziplock bags, in the cooler with ice. Happy smoking!

    Big ol' pork loin

    A pork loin doesn't pull apart like a butt or shoulder, there's very little fat. If you take it past 150 I think you'll be disappointed. I would do it like Al mentioned and slice it.
