    St. Louis ribs help

Not to stir the pot, but why is foiling ribs a crutch?  In the competitions I've seen, almost everyone uses some version of a 3-2-1 cook.  I smoked a lot of ribs without foiling, then I started trying the 3-2-1.  My cook time is the same either way, staying around 220-225°.  Foiling helps keep...

If I win the A-MAZE-N-PELLET-SMOKER Contest, I plan to smoke beef brisket this summer. Although we live in Georgia now, it doesn't mean this native Texan can't make some good Texas brisket!!!

    Hello from an SMF newbie

My wife and I live in Thomasville, GA, about 40 miles from Tallahassee.  Now that I found this group, maybe we can join the fun in 2015.

Help selecting a smoker (first post)

Jbili and timberjet both make good points - listen to them!  As I have said, I started with a Brinkman (back in the 90s) and loved it for what it could do; cooked a lot of great stuff on it; and it was inexpensive.  I was dead-set on an offset for my next smoker - well, just because they look...

Help selecting a smoker (first post)

In the ad for the stores down here, it's the Char-Broil174 1280 Smoker that's listed for $168 In-Store only.  Interesting thing is the same smoker is listed online for $159.

I just looked and I see Walmart has an Oklahoma Joe Highland for $268.  If you like it, go for it! Walmart lists the Longhorn for $428.

Help selecting a smoker (first post)

Over the past few years, CharBroil bought Oklahome Joe and New Braunfels to eliminate competition.  I haven't seen newer models to see if they maintained the same quality. For something to last 3 years, you could get the cheapest thing you can find.

Help selecting a smoker (first post)

Well, that question could get you a ton of different responses.  The best way to answer is that both have been around a long time.  Both make low priced units as well as better ones.  Are they the best around?  Eye of the beholder on that!  Looking up reviews from various sources will give you...

Help selecting a smoker (first post)

I used a Brinkman to start with because I needed something inexpensive.  When I decided to go with an offset, I chose the New Braunfels Silver Smoker that is now made by CharBroil.  It was an excellent first smoker for us and worked just fine for pork butt, ribs, turkey, brisket...and the list...

Howdy neighbor!  Maybe we'll run into each other sometime - but not too hard! Unconventional?  That's the best way, isn't it?

MYPIN PID help, need switch signal to be 110V

The PID is the controller.  The SSR is the switch.  On an ohmmeter, an open(off) switch(relay) will read infinity; closed(on) will read 0(zero). Keith posted a good drawing of the way the system should be wired.  Black and white DOES matter when wiring anything.  The black (hot) wire should...

    Wooden Smoker Build

Being a woodworker, I have a concern about using plywood for your cabinet due to both the heat and moisture that will be present.  I've wondered about building a vertical cabinet for smoking that would be fed from a side firebox well-insulated from the wood.  There are several good choices for...

Some rust left on expanded steel grate

I agree pretty much with what Jim said.  I wouldn't waste any type of food on seasoning it, just wipe heavily with vegetable oil, hose it down, then wipe with vegetable oil again and heat it real good.

    Chubby Bald Smoker

Welcome to the craziness, SENOS.  This kinda thing is addictive, for sure! As to the beer drinking, I seem to handle that pretty good on my own!

MYPIN PID help, need switch signal to be 110V

An SSR doesn't supply voltage to a device; it switches a voltage on and off.  The output contacts can be checked with an ohmmeter to verify whether they are open or closed.  The input voltage to the SSR coming from the TA4 controls whether the SSR is on or off.
