    the beef was a little tough but better when sliced thinly. the ribs were phenomenal as usual. my rub recipe is really getting good. i'll post it if anyone wants it...

    they're all stuffed the same. to be honest, i can't remember for sure, but i'm 99% positive it was chuck. i sliced it about an inch thick, then pounded it out with a mallet.

    hey all- this is a smoke i did a couple months ago. sorry for the delay here's the ribs here's the stuffed beef. i marinaded it in jamaican jerk.   and the wife making dutch's wicked bean. these were really great.     smoked with peach @ 225*. i took the beef to 155* and let rest.

    if you foil at 160* to 170* internal and take it to 205*, it should pull. just keep the smoker under 250*.

    i think it is, but i don't think it'll get hot enough to matter. i have a torch though and could safely burn it off. i think i'll do that thanks! thanks. i'm waiting on a new afterburner b/c this one's going to be a gasser. i don't want to fill up the firebox with charcoal now... i just cleaned...

    hey all- i did a few mods and included some before and after shots. i cleaned it out, then sanded it down and painted it. i replaced the crappy charcoal grates with some perforated stainless i had laying around. i also fabbed up a heat deflecting baffle from a perf pan my work was throwing away...

    thanks! yeah, that's my triumph... it's pretty badass. i just ordered a smaller countershaft sprocket for more rwhp. it's got a pipe and re-mapped ecu to suit. with the sprocket on there i'd say it's pushing around 130 at the wheel!

    it had some surface rust on it but nothing to worry about. i'm going to install an afterburner and it's going to double as a charcoal grill as well! i was thinking about using the afterburner from my ecb but i think i'll just buy a different one.

    there's a guy in my neighborhood selling a new braunfels black diamond for $130. it's a few years old and has a little rust but it's not in bad shape. what do you think? i've been thinking about getting a SFB smoker for a while now... thanks, guv
