I have the tube, though I think most owners have the tray. Either way will work, some say the tube puts out too much smoke, but it works fine with me. BTW, if you are on a tight budget, you may want to check Craigslist. I often see MES offered at a decent price, though as you have learned...
I have been asked to cook a few butts for a deployment party ( Husband is in the navy going on a long deployment ) I thought we were doing 10 pound butts, and I worked that timing out, but it turns out the butts are around 7 pounds each. I want them done at around 2 pm . I don't want to have...
I have tried a few different types of pellets, and haven't noticed much of a difference. Not sure which Amazen you got, I have the tube, and put it in the lower left side on my Gen 1 MES 40. Nice looking ribs. You might want to try skipping the foil next time - it is an easier process, and...
I won't disagree with Auber, but I recall from reading some info on thermoworks page that the critical issue is the mass of the the probe, but the mass of the sensor - for example, the thermopen has a long probe, but towards the end, the probe gets very narrow, and that is where the sensor is.
This is the one I got from Amazon, works fine for my Mypin PID. I think they would sell more of them if they didn't put K type in the description. BTW, while is says K type in the heading, it also says RTD, and it is definitely an RTD probe.
Gary, as long as the heating element comes on, it is suitable for a rewire, as others have suggested. The Auber is one approach, or you can DIY a controller, there are quite a few posts here on how to do it. If you decide to rewire, I would rewire so that you keep the high temp cutoff in the...
Thanks for posting the update , it may help others in the same place, Sorry the fix didn't work for you, but hope you get it sorted out. If all else fails, it is pretty easy to wire a third party controller like an auber or even a diy controller for around $60
Gen 2.5 is what you want. It will have controls in front, and a vent in the top left corner. Stay away from the vent on the left side - upper left. There is a guide with photos on the site as to different models, but could not find it in a quick search.
It may be cheaper to build an electronic controller - I built one using a MYPIN controller, and it ended up costing about $60 in parts - you might want to check on the pricing of the parts over there. Here is one page with some info -...
London, I would start with a new controller, if that doesn't work, then also change out the element, though most likely, the controller fried out right away, and the element is likely okay. If you are good with electronics, you can rig up a test circuit to test the element using your...
I have read a fair amount about this, and most of the stuff I have read from people who have studied the science say do not ever soak chips. while it may seem like it makes them last longer, the "smoke" that comes out at the beginning is mostly steam, so you aren't getting the smoldering...
You can use regular wood, Pressure treated would last longer, though if the exterior is watertight, and the framing is not in direct contact with the ground, you should be fine with conventional lumber.
Bear, I have heard that walnut is bad for horses, but it is great for furniture. I have a 35 gallon pail that fills with sawdust pretty regularly, from a table saw and planer, but it is mostly walnut and I was afraid to use it in the smoker.
Bear, I have lots of sawdust, but since it is mostly from cutting walnut, I wouldn't think it would go all that well in a smoker - have you ever tried smoking with walnut dust?
Just finished some St. Louis Ribs - 12 hours in fridge after applying Amazing Ribs Memphis Dust and vac sealed. Sous vide 33 hours at 142 ( I had planned on 36, but I think SV is pretty forgiving whether it is 33 or 36 hours, then out of the vac bags, and straight into the smoker at 190...
