Howdy Sparky!
Man I'd advise anyone to stay out of this part of Texas between mid May and October. Steamy and hotter than the back porch of hell and crawling with all manor of things that bite sting and generally make your life miserable. I live in Kingwood which is a rival community of the...
Well that settles it then, I saw them at Lowe's yesterday for $8 and will be stopping on the way home to pick one up. It just looks too cool and would be a good space saver in the smoker. Thanks,
Jimbo
Oops! Me thinks I may have offended you Vegan. That wasn't my intent, it was simply a poor attempt at Texas humor. Folks down here are mighty opinionated and I was just pandering to that. Personally I don't believe there is any BBQ style that is bad, they are all just different. The Welcome is...
Howdy Darren.
I'm Jimbo from a large historical town called Houston which is located in East Texas -- just West of the Louisiana border. (Sorry, couldn't resist) Welcome to all things smoky.

Sure did Cowgirl,
They are at the end of my Bacon Saga post. I never bent up the heavy duty ones because I tired bread cooling racks for proof of concept and they worked so well I thought why bother? My local Dollar Store has packs of two cooling racks for a buck, one rack snipped in half with...
I'm with the Dude on this one, if you don't use the cure it won't taste the way it should. The meat will not have that nice red color or the "ham" like taste using salt and sugar alone. Will the curatives eventually kill you? Maybe, who really knows? People have used nitrate and nitrite for...
Looking good! How does that leg rack work for ya? I saw those at the Home Depot the other day and though about getting one myself, is it worth it?

Guess that wasn't too fair,
I didn't mean to give Y'all too much grief, I lived the Columbia Gorge for 17 years and worked in Alaska too so cold weather is nothing new to me. But I sure don't miss it much so y'all have my sympathy.
If it makes y'all feel better, just wait a few months and it...
I cold smoke in my NBB by putting a cheap Harbor Freight gas burner in the firebox with a cast iron pan of chips, I fill the water pan with ice too. The wood chips never catch fire or flair up in the cast iron. Just a thought.

Truly glad to hear you say that Ableman! I have yet to get mine and I'm still upset that they shorted me on the 12" unit. But if your happy with yours than maybe mine will be all I need too.
Jimbo
Man I hear Y'all, i
They say it's going to be cold here in Houston this weekend, could dip down into the low 70s! I may need to wear a windbreaker on the back nine tomorrow. Burrr.

As long as we're on the slathering subject, I'll mention the mayo on birds again. I use yellow mustard on all my pork (except bacon) sometimes but not always on beef. And mayo on poultry every time.
Jimbo
Well I'm still a bit mad, I called them back yesterday and was told they could do nothing about my order for the 12" unit. I know I ordered it when it was still available because it was still on the website when I did order it and some of y'all got one after they had pulled the add. Still it was...
Yep they sell heads at my local Carneacia (Mexican Butcher) just down the road here in Houston. The local Mexicans steam / boil them for the meat in pork tamales. Bet you didn't need to know that hu?
