Yep, true blue whisper. I can sear things just fine on my bge as well. My next purchase will be a high quality offset to replace my cheapy. If I won the lottery you can believe I would have one of those argentine grills in my backyard too tho!
Not at all Steve. I was curious bc a lot of folks don't like mesquite. I usually use a bit of that along w hickory on my pulled pork. It seems like the general feeling among people on here is that it is too strong and earthy. End of the day it's all about personal preference.
Hickory and cherry is a great mix for PP. Hickory is definitely a stronger wood, so maybe replace that with pecan and cherry for the ribs, cut the time for the smoke down a bit, and see if you like that.
Be sure to post some pics! And most important, there are two good excuses to drink beer in the early AM with no guilt. Fishing and smoking meat. Be sure to braise yourself with some beer too)
