Willies Texas Hot links tuned into Snack sticks & Jap Sticks

Btw, where do you buy your casings at?  What kind are they?   I've just bought the LEM collagen casings, but they don't have the strings at the ends.

Willies Texas Hot links tuned into Snack sticks & Jap Sticks

Those snack sticks look great.  Trying these next time, with maybe a little less kick.  I don't want them so hot you can't eat them, but want some kick.  Thanks

Snack Sticks - Looking for A Hot Recipe

Encapsulated citric acid. It gives the meat kind of a sour taste. They call it a tangy taste, but it's not my favorite.

Snack Sticks - Looking for A Hot Recipe

Thanks guys. I have some more LEM original, so I might try that again and add some extra peppers. Thinking of using some jalapeños, possibly some habaneros. I'm also working on coming up with my own recipe. I'll keep fidoling with it until I get it right.

Snack Sticks - Looking for A Hot Recipe

Hey guys, I've been trying different snack stick recipes, and am looking for a hot one.  I remember as a kid, my uncles would bring over "ted hots" in the fall after one of them got a deer.  They would always have their deer processed at a butcher, so no recipe to be passed down.  I can...

    Seven Pepper Snack Sticks

Okay, thanks for letting me know.  I'm looking for something that you need to have a beer with if you know what I mean.  Something with a definite kick.  I know I could just start adding more pepper, but at the same time, I don't want to go overkill.  I guess next time I'll need to try a couple...

    Seven Pepper Snack Sticks

Just curious about the 7 pepper sticks.  Are they spicy?  I've been trying to get a HOT recipe, and can't seem to get there.  The latest recipe I use, I doubled the amount of cayenne, crushed red pepper flakes, and hot sauce, and it didn't seem to make a difference.  I'm looking for a recipe...

    Wood for Smoking Cheese

Hey guys, I just smoked my first batch of cheese last weekend, and am going to do some more today.  I know most people use apple, or some kind of fruit wood for smoking cheese.  All I have right now is hickory pellets.  Does anyone use hickory on cheese?

    How to store smoked cheese?

Are hard cheeses better for smoking than creamier cheeses? Hoffmans super hot pepper cheese is a favorite of mine, but it is pretty creamy.

    How to store smoked cheese?

Thanks for the feedback guys.  Now how long do I have to wait to try it?  I heard two weeks was kind of the minimum.  Is that correct?  Also, I smoked sharp cheddar and pepperjack.  What are your favorites?

    First time (beef) ribs

Bear, I have to say, you are one of those I learned from. Your posts are great. So helpful for someone coming in new. I'm no pro yet, but I sure can put out a good spread now days, regardless what I'm smoking.

    First time (beef) ribs

I just went for something simple.  SPOG is about as basic as it gets besides just salt and pepper.   I've made my owns rubs before, including Jeff's rub, which is my favorite to use on pork.  This was the first piece of beef I have smoked, and a lot of videos I've watched, and recipes I've...
