    Issue with Snack Stick Casings

Thanks Dave. I did let these cool slowly. I bought some natural sheep casings that I'm going to try this weekend. I've only used LEM collagen casings so far. I might have to try collagen from elsewhere.

Just curious as I've never heard of such a thing, what is a turkey tenderloin?

    Cajun Injector Creole Smoked Chicken

Thanks for the point Al. It was really good. The leftovers are going to be used to make a pizza with some smoked gouda that I made a couple months ago

    Issue with Snack Stick Casings

So I think I figured out what is causing my issue. When I pulled my last batch of snack sticks the casings were pretty stiff/hard. Like they were dried out from the cooking process. I let them sit in the fridge for a day before packaging and freezing, and the casings softened to what I would...

    What Flavor Smoke for Chicken?

Thanks for all the suggestions guys. This is what I ended up doing. A blend of hickory, apple and cherry. Turned out great. Enjoy. http://www.smokingmeatforums.com/t/256012/cajun-injector-creole-smoked-chicken#post_1644263

    Cajun Injector Creole Smoked Chicken

I've done several whole chickens in the past, and usually just do BBQ chicken smoked with Hickory. I decided I wanted to try something different, so I decided to use a creole butter marinade that I used with a turkey a couple weeks ago. I started this morning by spatchcocking the chicken...

    What Flavor Smoke for Chicken?

Yeah, Pecan isn't real common up here in Ohio, but I'll have to look for it sometime.  The big ones you can always find up here are hickory, apple, cherry, and even mesquite.   I requested an AMNPS tray for Christmas, and also some corn cob and alder pellets.  Want to try those on some smoked...

    Muslin Bags

Nepas,  Was this muslin in bag form, or did you have to make your own bags out of the fabric? There is a place in Wawa, Ontario that I've been to called Young's General Store, and they sell summer sausage that comes in a fabric casing.  I'm guessing it must've been muslin.  I was thinking...

    What Flavor Smoke for Chicken?

Hey guys, I have smoked chicken plenty of times before, and I usually just use hickory because that is one of my favorites for pork, and I always have some on hand.  I'm going a different route tonight, and thought I would ask for input from anyone that does a lot of chicken.   I made a turkey...

    Smoking a turkey

Welcome to the site.   I recently smoked my first turkey about a week ago, and it turned out fantastic, best turkey I ever ate.  I did not brine the turkey, all I did was inject it with some injection I found at the local grocery.  The stuff was called "Cajun Injector Creole Butter".  It was...

    Which smoker and why?

I'm not sure on any smokers you could buy that would be big enough for that, but I can say that I built a smoke house based off of this post - http://www.smokingmeatforums.com/t/157280/small-smokehouse-build I have mine setup pretty similar to this, with a propane burner from my turkey fryer...

    Meat grinder

If you are thinking of getting something small like a Kitchen Aid grinder, I would recommend going with one of the smaller grinders you can find, and getting a separate stuffer.  I have a LEM #8 Grinder, and it can chew through the meat fairly quick.  Much faster than the Kitchen Aid.  LEM also...
