i had a 5\8" gap on my door and bought a D shaped gasket that is hollow in the middle from mcmastercarr.com I used a food grade high temp silicone to adhere it. a year later it is still perfectly sealed and has not pulled apart anywhere.
I built my double door SS commercial fridge build last year and bought a pellet hopper assembly from smoke daddy inc to use as my heat source and love it. It will heat my smoker up, bought the same size as yours in minutes and is super efficient. I live in Iowa and run it in zero degree...
If u can only afford one get the maverick. I have both and love them. The thermapen will read temps in one second so u can check several places on the meat quickly. And the thermapen is alto.more accurate imho.

Hey Joe. I run my smoker at 225 degrees and smoke til it hits 160 degrees, spraying with Apple juice every hour. When it hits 160 degrees I wrap in foil and run til it hits at least 190 degrees, usually 195 degrees, then wrap in towels and place in a cooler for an hour and it usually plateaus...
My SS commercial fridge smoker I just built has a 1" granite slab in the bottom. Holds heat very well. And super easy to clean. I can shut my smoker down and 2 hours later it is still at 200 degrees. Uses hardly any pellets.

The FDA now says 145 is done for pork.....but I still go to 160 and have plenty of moisture in my product. Personal preference I guess. :-)

They are rolled up in the container. Not tight rolled or tied by any means. All surfaces are being exposed to the brine. Friday nite will be day 17. Maybe let it soak in the brine til then and then rinse and allow to sit in the fridge uncovered til Sat afternoon?????

So last nite I was checking on the bellies in the fridge. I pulled the container out that had the two bellies in them I skinned and they were fine. Rotated them and repacked in the brine and put them back in the fridge.

i dont get nearly enough smoke with just my pellet pooper. i have to use a smoke generator with it also. i use bbq delight hickory in both, and mix some jack daniels pellets in the smoke generator along with the hickory. great flavor and drives the neighbors crazy :)

Yes. I have one twice that size that is insulated and my smoke daddy pellet pooper can sit at over 500 degrees no problem. I also.am.using the Magnum PIG as my cold smoker. Runs great.

Smoke the butts until the internal temp is 200-205. Ribs I smoke until 190. I foil both at 160 and add butter, Brown sugar, and whatever other flavor enhancers you desire to help keep it moist.
