dave - did you remove the skin before smoking or did you leave it on? i got 6 big iowa swabian hall hocks with feet and skin on and deciding how to do them in the smoker.

the farmland ones are precooked shanks pieces. you heat them up and fry them, then sauce them. they are amazing. i bought some shanks with the trotters still on them. going to try and smoke them saturday and see what happens :)
Thanks for the info. I called true mfg amd it is stainless on all sides including the interior cabinet. They used a product called ecofoam. Contacted that company and waiting for a response. True would not comment. Suprise suprise :)

Yeah. I thought that too. Wasnt sure if it would pull the heat up the middle since the stack exits in the top center of the chamber. And having the water pan 4" above the burn pot, I think it would start to boil the water and put off heat. Might take a bit longer but should in theory.

You can make a no weld expanded metal charcoal basket with wire ties, tall bolts/washers/nuts easily. Just need a piece of expanded metal, a charcoal grate, 4 bolts, 8 washers, and 8 nuts. No galvanized metals!!!!!
