I did this with some chicken breasts and it turned out great...pounded flat, layered with sausage, and wrapped in bacon...kind of a chicken breast fattie. Maybe do this with the breasts, and do a bacon wrap or brine to the rest of the bird...

Dave, sounds fantastic. Believe it or not, I have not done a prime rib on the smoker, but I want to do one. Everyone that does raves about it...I love prime rib with a zippy horseradish.

What Smokeguy said...if it is one of the super cheap orange cords (14 gauge wire or smaller), You are better off finding an outside outlet and plugging in direct.
Use a large gauge wire and you'll be OK.
Here are the final pics of this smoke.
First the ribs. They turned out really good. Since I am cooking these for BBQ rookies, Fall off the bone style is what is required. Tomorrow I am going to make a Maple syrup and apple juice reduction to use as a glaze sauce that they can apply themselves...
Looks great Alex. I have a big Ham bone that I put in the freezer from Thanksgiving...been planning some split pea or lentil soup, and this is enough to put me in motion. Maybe I'll make some rolls too, I saw your post on that and thought they looked awesome.

The rib skirts are out of the smoker. When I trim the spare ribs, after pulling the membrane, I slice off the rib skirts and hit them with some rub, and roll them up. I put a toothpick through them to hold them, and into the smoker they go. I love these, and ususally...
