    Looking for new ideas

Hey Smoking D, I did this with some chicken breasts and it turned out great...pounded flat, layered with sausage, and wrapped in bacon...kind of a chicken breast fattie. Maybe do this with the breasts, and do a bacon wrap or brine to the rest of the bird...

SMF's Dude Abides inspired stocking stuffer

Merry Christmas everyone. When I started posting to the SMF, I met a lot of great people, and always thought that "The Dude Abides" was a peculiar user name. Then one day I was in a neighboring college town and saw a bumper sticker that said "The Dude Abides". What gives? I immediately came...

Love a good experiment...Points to Grandpajohn on great advice. Try it out and then adjust as required, but I think it looks workable where it is.

In the doghouse on Christmas eve

Gary, Done the same thing before...OOPS! My wife like to find the cover of the water meter with the lawn mower. One time I was at the shop at work and the thing was bent at a 90° angle (picture the blade stirring the dirt). One of the shop guys walked by, and I'm not kidding, he blurts out...

A Christmas ham gone bad: The final chapter

Hey DW4D, Ham looks pretty good from where I'm sitting. Besides, you will get to enjoy some awesome bean soup outta that Dino Bone. That right there is worth the effort in my book. Way to stick with a tough smoke, too.

MES and big orange extension cord OK?

What Smokeguy said...if it is one of the super cheap orange cords (14 gauge wire or smaller), You are better off finding an outside outlet and plugging in direct. Use a large gauge wire and you'll be OK.

Mrs. Engineer's Christmas gift to her co-workers

Here are the final pics of this smoke. First the ribs. They turned out really good. Since I am cooking these for BBQ rookies, Fall off the bone style is what is required. Tomorrow I am going to make a Maple syrup and apple juice reduction to use as a glaze sauce that they can apply themselves...

Ham Bone and Chipotle Bean Soup

Looks great Alex. I have a big Ham bone that I put in the freezer from Thanksgiving...been planning some split pea or lentil soup, and this is enough to put me in motion. Maybe I'll make some rolls too, I saw your post on that and thought they looked awesome. Tree looks good. Merry Christmas...

    A Couple Turkey Questions

By putting a frozen breast in the brine, it is actually making it colder...Remember when you make homemade ice cream? You add Salt to the ice to make it cold enough to freeze the mixture. A water/ ice mixture gets colder when salt is added because as ice molecules melt they absorb energy from...

Mrs. Engineer's Christmas gift to her co-workers

Update on my progress...... The rib skirts are out of the smoker. When I trim the spare ribs, after pulling the membrane, I slice off the rib skirts and hit them with some rub, and roll them up. I put a toothpick through them to hold them, and into the smoker they go. I love these, and ususally...

Mrs. Engineer's Christmas gift to her co-workers

Update on my smoke...Chicken is done, and the butts are at 157°. It is raining pretty hard, and we have had some wicked lightning and thunder. I swear on of them was way to close for comfort. I have to be alert, because in the last 10 years, there have been 5 houses hit within 1/4 mile of...

Mrs. Engineer's Christmas gift to her co-workers

My Wife decided that she would have me cook a bunch of stuff and then throw a luncheon at her work for all of the poor bastages that had to work Christmas Eve Day. I have the day off and can set them up nicely with a table of BBQ. Mrs. Engineer looks like a Rock Star, and I get a draft pick to...
