    They say that it is a 1800 watt (2.4 hp) grinder, but that is a peak rating. I think that rating is conveniently placed (OK, here is where I go all nerd on you guys) because at 746 watts per horsepower, for a 120 volt service, it will draw exactly 15 amps...which is the standard breaker size...

    It is worse at comps where I throw a Friday night party and then cook all night to turn in on Saturday at noon. In fact, I usually smell so much smoke that if you cut me open I would probably have a smoke ring! I pack stuff up after I turn in and the next day I can really tell how good it was...

    One suggestion is to find out if it is going to follow KCBS rules...is there going to be a garnish? Who is going to judge the ribs? When I'm cooking for bbq rookies, fall off the bone is required, but certified BBQ judges want a bit of tug...if you take a bite, you should remove the meat...

    SS, Those look absolutely perfect. Bacon looks good and crisp and a great smoke color to them. You have the photo thing mastered too...for a job well done. As a tip, if you keep some of the veins and seeds, you get to drink more beer to cool yourself off!

    Use it...after your initial seasoning, fire a couple of butts it will season nicely and rust will not be an issue. It will season just like a good cast iron pan. Expanded metal works great for grates. If you are spanning a distance, just build a frame around it to keep it from bowing...
