    Hey, maybe the brisket fairy sprinkled some magic dust on there while you weren't looking to make it cook faster, or maybe your smoker is sitting in some weird space/ time warp.

    I have to echo Pit 4 Brains statements, start out with cheaper and more forgiving pieces of meat, until you have more control with your smoker.

As far as your smoker, if your not to exceed 170* in it, then it will take you a long time to do bigger pieces of meat, ideally for smoking butts, brisket you want to be in the 220-230* range and it takes...

    Next time take some pics, we love us some qview here on smf. Next time you do ribs, try using the 3, 2, 1 method for spareribs, which means 3 hours on the smoker, take off and wrap in foil put some apple juice or whatever, some kind of liquid, about 1/4 cup or so, put back on smoker for 2 more...
