A guy at work gave me a couple Ghost Peppers today. I sliced them for the dehydrator and kept the seeds to plant next year. Is it ok that I still have some of the membrane attached? I have them wrapped in a paper towl to dry out then will place in an envelope till February to start in solo cups.

5 lbs course ground pork butt
2 tbsp. Salt
3 tbls. Sugar
1 tsp. Quatre-epices
1 cup water
Combine all ingredients, mix well and stuff into hog casings. Tie off every 6-8 inches. To cook, fry or grill.

My wife bought me a Cabelas jerky canon for my B-day. What size casings can I use on the snack stick nozzle. Or would I be better off buying the 3/8" nozzle from LEM. I would like to make snacksticks with a casing what is my best approach.
Can u dry peppers after you freeze them? Some people at work gave me about 25 lbs peppers. I have smoked and ground maybe 5 lbs so far. Wife might make candied jalapenos tomorrow.
