Ok I'm in the middle of smoking a boston butt, at the 3 hour mark my temp tanked down to 214ish. The only way I was able to get it back up was adding a full lit chimney through the side door? On top of that my smoke isn't wanting to go back to tbs. any ideas? I feel like this wsm should hold its...
Question: I've had the butt in for about 20 minutes, the temp read 36 when I put it on, and it's only at 37. Is this normal, or did I put my meat probe in a fat pocket?
For lighting, buy a charcoal chimney. You fill them with charcoal, load the bottom with newspaper and light it. As for the temps, I have to think you're not using enough charcoal. What arrangement are you using with the coals?
