    Smoker looks fantastic! I'd say keep the extra paint around for touch-ups and such, don't get rid of it.

    For my brine I use a mix of one part each of garlic powder, onion powder, ground pepper and 4 parts non-iodized salt. Mighty tasty!

    It's to leach out the excessive salt within the corned beef. I soak mine for two days, changing the water twice a day.

    If the probe wiring gets wet, it's done. I'm not sure what replacement probes cost but I know Maverick sells them.

    A weird sensation...

    Between weekend projects, and lots of leftover meats in the freezer, I decided to not cook anything new this weekend, maybe even next if the leftovers hold out. It feels really weird not cooking.

    Maverick Thermometer ET-7 and ET-73 Differences?

    The ET-7 has dual probes for two diffent meats and allows you to set two "high points" for the alarm. The ET-73 also has dual probes, but one is for pit temperature that you can set a "low point" for the alarm, so your pit won't get too cold on you. That's my take on it.

    You can check them by dipping the probes in boiling water and see what they read. Some you can adjust too, if needed.
