At 148 they were actually undercooked. 195 seems to be good for a decent bite through for me and 205 for fall off the bone. I never cook by time. Always by temp.

My father in law likes his well done. We ate steak one time with him. Now we eat chicken, pork or hamburgers. I refuse to cook all the flavor out of an expensive cut of meat and watch it then take an A1 bath to try and get some flavor.
I don't have a picture but I putnit on the left side on the bottom of the smoker. I just took a small bolt and put it under the end closest to the door so it wasn't laying flat on the bottom. That way it gets a little more air and burns better .
You won't need much smoke for chicken. It's really easy to over smoke chicken with those chips in that smoker. I have an MES30 and have over smoked chicken on more than one occasion!
Leaving the chip loader out like said above really helped mine. A smoke tube in the bottom of the smoker with the chip loader left out about an inch also makes it nice for the longer smokes

On your 26" do your blades fit as well to the bowl as they do on the 22"? I can still close mine and choke the fire out and save the charcoal but the blades definitely don't hold as tight to the bowl as they did on the 22" I had
