    2nd Cheese Run

Yep. Cold smoked for 2.5 hours with apple pellets in my Amazen pellet tray. My first batch at 2 hours was good but I wanted just a little bit more smoke.

    2nd Cheese Run

Thanks! That is a bit of an experiment. I wanted to try it but all the string cheese we had in the house was individually wrapped and I hate wasting all that plastic if I can help it. If those 4 turn out I will try to source string cheese that is not individually packaged and smoke more next...

    2nd Cheese Run

I smoked my first cheese back around the holidays and the stash is almost gone. So before the weather gets too much warmer I wanted to get another load in the fridge to mellow. Should be ready to go just in time for perfect cheeseburger weather. Here are the pics. The latest victims: Can you...

Pit Boss Pellets, A Good Deal?

Picked up a bag at Menards last summer for about the same price. The smokes I have used on have been good in my AMNPS. I was skeptical when I bought it since it was so cheap but I thought it was worth the gamble and it was.

    Hobbies other than smoking/cooking

When I have time my favorite hobby is glassblowing. With 2 little ones (boys 2.5 and 9 months) at home and a full time job I get into the studio about once a month but it's better than nothing. I love sculpting but it's much easier to sell glasses, mugs and vases than sculpture and they are fun...

Smoker Build Blossoms into Massive Outdoor Kitchen Project

As someone with 2 kids under 3 myself I am utterly amazed you got this done. I'm lucky I even had enough extra time to read this thread much less build something even half as awesome as this. Well done!

    Desiccant

Hello All, I know that keeping pellets dry is very important to keeping the AMPS lit. I have access to a large supply of desiccant packets that came with computers that we received here at work. Is it safe to toss a few of those in a container with some pellets to keep them nice and dry? My...

Lodge Dutch Oven Lid Knob Replacement

Does the hole in the lid go all the way through? I know I've seen where people will replace knobs on dutch oven lids with stainless steel drawer pulls. Then you can just grab one at Home Depot or Lowes.

Who's cooking chicken wings for Super Bowl Sunday?

I find it very hard to buy wings since I can regularly get legs and thighs for 99 cents a pound and wings are twice that at best. Usually more.

    Starting My First Canadian Bacon

The salmon patties were a bit of an experiment and couldn't be any easier. Coscto sells wild Alaskan Salmon Patties from Trident and we usually grill them. They get tossed on the grill from frozen and are really good that way. I just tossed 6 of them still frozen into a 225 degree smoker until...

    Starting My First Canadian Bacon

Here is the follow up to my first attempt at Canadian Bacon. Very good stuff and I will do it for sure again. It is just a little bit salty for some of the members of my household so next time I'll give it a soak for a couple of hours and see how that goes. It wasn't too salty for me which is...

    Starting My First Canadian Bacon

That's one way to get my wife to agree to more kitchen and grilling stuff. "But Sweetie, it's not for me, it's for the boys." ;)

    Starting My First Canadian Bacon

Started curing my first pork loin this weekend to make Canadian Bacon using Bearcarver's Tenderquick method. The local supermarket had loin on sale for $1.99 a pound and I picked up two 4 pound chunks. I only have one photo because I need to keep an eye on my sous chef while handling raw meat...

    1st Cheese Attempt

Temps last Friday at around 0F had me thinking of trying my first attempt at smoked cheese. Picked up a bunch of 8oz bricks on sale and fired up the AMPS with apple. There are 4 extra sharp cheddar, 3 pepper jack and 1 brick of Monterrey jack. Smoked for 2.5 hours and double wrapped them and...

    Canadian Bacon Question

Sandwiches, crackers and cheese, tasty snack are a few I can think of. I am looking at using this in place of overpriced and over-processed deli ham in some cases.

    Canadian Bacon Question

Hey All, I have done some searching for the answer here but I have yet to find a definitive answer. I have a pork loin in the freezer that I am going to cure and smoke using Bearcarver's Tenderquick technique here...

    Smoked Salmon Burgers

Hey All, We buy salmon burgers from Costco that are made by Trident. Here is a link to the Trident web site: http://www.tridentseafoods.com/Products/Detail?pid=c8e8baa8-0be5-498b-9a04-d573d08eeeb9 We usually just grill them from frozen on the Weber but I'd like to try hot smoking them in my...
