    I've had an Anova 800w for a couple years and love it. Here around Christmas Anova had the nano for $65 shipped. Picked one up for the heck of it and so far it has been pretty impressive.

    I have 2 of the Anova models and can see circulation with both. You can disassemble the bottom end and see if something is blocking the circulator.

    I guess it's possible, when I have dried peppers in the oven and open the door to check on them and get a little close too soon it will clear out your sinuses. And that was at 170 deg.

    Just a thought, I notice from your pics that it looks like your lid halves are only hinged on one side. . I have found them at Ace Hardware also.

    I use 1 teaspoon per 5 lbs in my snack sticks. They have some bite but not enough to hurt anyone.

    Jalapeno drying?

    I always cut meatier peppers like jalapenos or habaneros in half lengthwise before I dry or chipotle them, they dry so much faster. Lay cut side up to keep all the seeds.

    They were just some I had laying around. They came out of a boiler and are keystone shaped. Any size will work, it's just about adding thermal mass.

    To provide more air during startup. It takes more BTUs to raise temperature than to maintain temperature, hence the additional combustion air.

    They freeze really well. Whole or halved and gutted. I do cowboy candy, jalapeno jelly, escabeche, chipotle, and a pickled jalapenos and carrots (I'll have to dig that recipe out and post it), just to name a few
