I do boneless skinless breasts right on the rack after an hour of brining & a quick rub. I smoke them to 145 internal temp, then finish them on the grill for a few minutes. I usually do 10lbs at a time & eat them all week long.

I think the simplest explanation is that once you get the AMNPS lit, it smolders sort of like incense, and puts out perfect thin blue smoke for more than 10 hours. I won't smoke without one.

I use an AMNPS in my mes 40. Puts out great smoke. If I want more smoke for something, I just light both ends. I've actually made a couple of things too smokey in my experimentation.
Sounds like you need to contact MB customer service for the free retro kit. That should get your machine smoking right.
