I use ground beef & a jerky gun. It makes it an easy to bite texture and coupled with Oster brand seasoning and just a little McCormick's Hot Shot, is perfect for my taste. I Dry for 8-10 hours in my MES.

I think your main problem is only letting it burn for 5 min. I fill my AMNPS then put it in the MES 40 for 30-60 min while it pre-heats. After lighting it & letting it burn for 15 min, I put it on the bottom rack with a foil drip pan on the rack above it. I have my chip loader all the way...
Just wondering what everyone does. When you foil your pork butts at 165, do you foil around the thermometer, or pull it out and re-insert it through the foil?
The only mods I've found necessary are the ones Rabbit mentioned, ceramic tile to fix the hot spot, & 3" elbow to help with the draft. Couldn't agree more about being careful with the mes remote. It's way easy to turn it off & not notice til it's too late. I'd recommend something forgiving...
The AMNPS rocks. Lets you smoke for up to 10hrs without adding chips every little bit. Best thing about it is that it consistently puts out thin blue smoke, & none of the nasty thick white stuff. The Pitmaster Blend pellets are my favorite.

I had similar problems, through trial and error I've got a system that works great for me. I microwave the pellets for 90 seconds, then light them and let them burn for 5-10 min. I have a 3" chimney on the vent, and have removed the chip loader, and pulled the chip tray out 1.5". Works great...
What Scarbelly said. You use the AMNPS instead of putting pellets into the MES ever 30min or so. Smoke from the AMNPS lasts up to 10hrs on a full load, and it puts out the highly desired thin blue smoke.
To do 20-25lbs, that's only 3 average size butts. I don't know about availability there, but I'd go with an MES. Simple, electric, and when paired with an AMNPS, is as close to set & forget as you're gonna get.
