    Fish would be very hard to use a remote thermometer in.  My guess is that the probe would pick up more of the temp from the chamber temp than the internal temp of the fish, due to it being such a small, thin piece of protein.

    The recipe I use calls for 7 - 10 days (amazingribs recipe).  Mine are skinless and roughtly cut into 3 to 3 1/2 lb slabs.  I usually go 9 or 10 days and have had no issues whatsoever.  I just got two bellies curing last night - should be good to go for smoking next weekend.

    That's what I figured.  Bulk is the only way to go if you have the space and if you have the funds.  It's a lot of money to hand over at one time, but saves you a bunch in the long haul.

    Something doesn't compute here unless you are talking about 20 lb bags.  A ton is right around $495.  I got a ton of 40 lb bags shipped to MN (only a few hours from the plant) for $11 a 40 lb bag ($550 total).

    I have a Rec Tec and I can honestly say that the light is the most useless piece of equipment on the grill.  If you are anal about cleaning it, it will be ok but I definitely have issues keeping it clean.  I think a light mounted outside would work much better.
