I have lived in Florida my entire life and have had BBQ all over the state. I would not really say that there is any definitive "style" that is more popular than any other style. Most of the places I have been will usually have several sauces to choose from depending on what you like.
If you are using the minion method, use as many coals as you need to last for the smoke. I start my UDS with about 6-10 fully lit and ashed coals. With the minion method I can run for 15-20 hrs no problem on a 10lb bag of charcoal minus the 10 to start it.
So, the truck I had when I started this thread has changed a little. I was in a wreck and got another Tacoma only a year newer and a lot less chrome.
