    Anyone else make aged eggnog?

Sorry for the delay in getting back to you but I finally saw the bartender who makes the 1 year aged eggnog last night and he told me that in addition to the Fortaleza anejo tequila, he also uses Amontillado dry sherry. When blending the two, the the volume of sherry is 50% of the volume of...

    Country Ham Research

CP... I read your thread and noticed something missing in your commentary. Did you, or did you not, soak the hams before preparing and serving? To me, that's a mandatory first step when preparing a country ham. The ham must be completely submerged in water, and refrigerated for 2-4 days...

    Medical Insurance

Brian, Maybe I wasn't clear enough in my prior post, but if your current doctor isn't taking any ACA Market Place plans as of 1/1/2026, there isn't for you to "find". As such you and your current doctor will be parting ways, and you need to find a new one that accepts a plan acceptable to you.

    Medical Insurance

Brian, I just went through this thread for the first time, and it seems to me that the solution to your problem is pretty simple to solve. Based on what you've been told the current medical practice that you are a patient of will not be accepting the insurance that you have, effective 1/1/2026...

What in the Sweet Baby Jesus is going on? Meat prices.

In the past,Canada and Mexico have historically been dominant suppliers of beef to the US, largely due to their geographic proximity and the complementary nature of their cattle and beef industries. They've also benefited from the U.S.-Mexico-Canada Agreement (USMCA), though I don't know what...

    Anyone else make aged eggnog?

SSB - nice sounding recipe, and thanks for sharing. I, for one, have always detested eggnog. One of those Christmas items, along with fruitcake, that should just disappear. That said, last year, just before Christmas I stopped by the local pub and the bartender asked me if I wanted to dry their...

PigSkin Pick Em for 2025 (football)

Thanks for the rely. I assumed it was NFL but some NCAAF pools drop the so-called "first week" because of the staggered start of many schools.

    Goat meat

We love goat, which can be prepared in many different forms. While many compare it to lamb, I find goat meat's flavor more intense, and in a good way . Throughout much of the world, goat meat is considered the most popular meat, but not so in the US. More so in Asia, Africa, the Caribbean, and...

    Primo Action-Tuna & Asparagus

Looks great, philpom. Coincidentally, we served the same last night for dinner though I cooked the tuna steaks differently than you did. I seasoned the steaks then cooked them sous vide at 115F for 35 minutes, followed by a quick sear. As you did, I also served them with asparagus along with...

    Butifarra Soledeña

I first encountered butifarra in while wandering through the aisles of Barcelona's iconic market, La Boqueria. While in the pork section, there was a stand selling butifarra. I placed an order and received a plate with 2 links, each about 6" in length. Accompanying the sausage was a serving of a...

Looking for a new Sous vide cooker

The first thing I'd recommend is to contact Anova and explain your issue. They may replace the unit like they did for me about 6 years ago when a circulator I had crapped out due mainly to my own stupidly. If not, I recommend getting another Anova unit.

    Butifarra Soledeña

Excellent post, IAC. Very well done. I've had butifarra before, but that was in Catalonia, Spain. Great street vendor snack. Where in Colombia are from? Starting back in the 1980's, I traveled there many times in the past, but not to Soledad. Primarily Bogata, Medellin, and Cartagena. Love the...

I know there's Hellmann' and Dukes but............

I'm in the DIY camp when it comes to mayo. Both my wife and I are products of the North and it was always Hellman's. Then, we bought a second home in Florida 25 years ago and I heard several people mention Duke's favorably. While at Publix one day I bought a jar of Dukes, along with some deli...

SV: Seasoning Frozen meat before sous vide cooking

BHFG - As crazymoon said, go with "A". When I cook steaks SV, I season with salt, pepper, a couple smashed garlic cloves and a and a few dashes each of Worcestershire sauce, soy sauce, and fish sauce. There's no need to interrupt the cooking process for that. For steaks, figure on about adding...

PigSkin Pickem (Football), Choose Winners Only.. No Drafting Crap ..

Thanks for the quick response, but I'm looking for a NCAAF pool to replace one I participated in, and frequently was a winner, for a dozen years. The guy who ran it developed some medical issues and closed it down.
Great deal on LEM Grinders!
