Deer back straps and deer roast?

Bear has you covered on fat. Honestly the best use for deer roast is sausage or burger. Damn good too. Ask him about his bear logs.

Deer back straps and deer roast?

Oh man I love me some backstrap. I have done them numerous ways. What kind of smoker do you have? Remember that fat is not your friend when it comes to deer. Trim it all off. It's real easy to overcook a deer roast too so make sure you have a quality thermometer that you trust for the meat and...

    pork loin-HELP

Your plan sounds pretty good. I like my loin a little on the rare side of med. I know most people are scared to death of pink in the middle pork but not me. I would not slice until just before serving to preserve the moisture. Loins go really fast since you are not going much past rare. I like...

I think I bought the wrong ham lol...

It all depends how smoky you like it. Remember, it is already cooked and cured so you are just adding smoke and reheating. You could go as low as 180 and smoke for longer if you like it smoky or higher for shorter and faster with less smoke. I would totally use a glaze like the one above or...

You can try tapatalk. I used to use it when I had an android phone and it worked great. Not so much with my new windows phone. I just email them to myself from my phone and it's easy then upload from machine. Only takes a minute or two.

D'oh! May have ruined a pork butt.

Just goes to show Butt is the most forgiving of all smokables. I'm so glad it's fine. If you have not tried a finishing sauce give it a shot. I'm telling you you will love the addition.

What is everyone smoking or grilling for Mothers day?

Mom wants chicken so I have a gallon ziplock of teriaki wings marinading, another of drumsticks which I'm going to do lolly pop style and another of thighs that will be in my Southwest jerk sauce here in a few when I find my recipe. Going to have all the smokers going tomorrow morning.

    First Build,and New Operator

Nope you don't need a water pan at all. You will want an ash pan though and make sure you have 3 inches of clearance from the pan to the bottom grate of the basket. Looks really nice. Any more questions just fire away. Some guys use a heat deflector in theirs on the lower grate. I see pizza pans...

    Fire question.....

Doug, I have Weber hinged grates in mine. I can add coals or wood at will without messing with anything. Also I start the fire with the basket out of the drum and lower it in with a fireplace poker with the hook part. Works like a charm. I figure I want to shake the ash out before getting her...

    Tri Tip...help me out please

Cherry makes for a very red color which is great and I find that the med rare look goes edge to edge when you do it like this. You can smoke at a lower temp like 180 to get more smoke flavor as they don't take a lot of time to do. The sear does raise the temp enough to get med rare and part of...

    Lilac wood for smoking

I have used all those woods you mentioned. I did some chicken the other day with blackberry brambles and lilac and it was outstanding. Rose is great and grape too. It is a perfume flavor that is very distinct bur not overpowering with floral woods. Wild cherry is good too if you can find it. I...

    Where does your smoker live?

I have an EZ-UP pagoda. They have them at walmart right now for 120 bucks and mine has been up year around for almost 3 years. It is starting to look a little ratty now and it needed to be guy lined on 3 corners to keep it from blowing away but it has been great. 12 by 12. Pretty cheap and easy...
