From a relatively newbie that has done briskets that have all come out tender and juicy.
I only buy full packers despite smoking in an MES 30. I simply cut it in half and have a flat half and a point half (I do not separate the point from the flat, the point half still has some flat to it)...
Been wanting to smoke a brisket for a while, Each time I go to Costco I always stop and look to see what they have. A full 15lb + packer is just too much for our family unless we want to throw a party. And buying an overtrimmed flat is WAY to expensive at ~$6.50/lb
So today I did my usual...
Have not made baby back ribs in a while so with the warmer temps I thought this would be a perfect day.
Put the ribs on the GEN 2 30" MES just before heading to work (sorry no pics) but the same procedure.
Removed back membrane
Cut the ribs in 1/2 so that a full slab fits nicely on one...
It is steelhead trout,
It only takes about an hr or so to bring it to 160F. I start with a cold smoker, add slamon and wood then set to 230F
Takes longer to brine and cleanup than to cook.
Just out of the smoker.
Took it to 160F this time so it could be in the smoke a bit longer.
Mentioned it before but alder is simply amazing with salmon
Have not posted in a while. Since the beginning of the year I have been smoking steelhead once per week on my MES.
Steelhead is nice as you can put a whole fillet on one rack.
Brine is very simple as mentioned before
4 cups water
6 tbs salt
2 tbs brown sugar

The smoker is bolted to the stand there is no way for it to tump over.
When I meant that I had to use my foot to get it going, I meant when I move it from placer to place before and after a smoke.
Picked up my MES not quite a year ago and have been using it regularly. Last year around May Bass Pro Shops had the MES on sale and as a bonus they were giving away the stand "while supply lasted". Immediately I knew I had to put wheels on it if I intended on using it. Caryying it from place...
