    It is steelhead trout, It only takes about an hr or so to bring it to 160F. I start with a cold smoker, add slamon and wood then set to 230F Takes longer to brine and cleanup than to cook.

    The smoker is bolted to the stand there is no way for it to tump over. When I meant that I had to use my foot to get it going, I meant when I move it from placer to place before and after a smoke.
