Costco Prime Brisket Franklin Style(Kinda) w-Q View

Saw this pic leading to this post on the main page. I guess I am spoiled, I have a Costco right on the way home from work so I am fortunate that I have been able to smoke their prime briskets exclusively. Just picked up a 14.5 pounder that I am smoking now. They always come out great. I am...

    First Pork Shoulder smoke

Hey you stole my smoker!..... Funny mine looks identical, I do the same thing with my Gen 2 MES 30. I foil the slant tray and the bottom tray, makes cleanup easier. Also I spray "Pam" on the grates, that is a life saver

    Smoked Shoulder with Q-View

I have a Gen 2 MES 30, all black, that I got from Bass Pro Shops. When I got it, I did not realize it was the "inferior" MES. In any event, I end up just smoking with the temp set to 235 to 245, and load the chip tray full of chips. I have a AMPS, but never could get it to work correctly...

    Smoked Shoulder with Q-View

Our local supermarket (Jewel) had a 3-day sale for Pork Shoulder for $0.99/lb. Picked up one last night and immediately put it on the smoker for an overnight smoke. Coated with just a bit of mustard, then added Riley's all purpose seasoning as a the rub. Smoked with Apple (first load in the...

Why aren't beef ribs more popular?

Fads....Right now brisket is popular. I remember when skirt stake was popular. Give it time and soon beef ribs will be popular and you will not be able to get then anymore. In other words be glad they are "unpopular" As for me I love beef ribs, Betst thing about a standing rib...

    First Salmon Smoke

Meant to ask what wood did you use? I love cherry for beef and pork and I have tried a bunch of different woods (Apple, pecan, orange, peach) but always go back to alder. There is just something about alder with salmon/trout.
Great deal on LEM Grinders!
