I picked up a few pork loins at Payless yesterday and thought I'd make some pork jerky. I really like this high country sweet and spicy seasoning I get from rural King. I mixed up the seasoning and cure and let the pork marinate overnight about 12 lbs.

you could build a fire box to put on it and make a smoker if you want or if you wanted to keep it a grill you can get some universal burners to put in it and that would solve your flame issue.
I have a friend who always injects oj in his pork butts and let's it sit overnight. it adds a good flavor and he says the acid helps tenderize the meat. I've yet to have some of his pulled pork I didn't like.
