There's no culture in the kabanosy recipe in any of the Marianski books that I have...and I have all but the mullet and cordial books.
I have a LEM #12 grinder...meh!!...it's okay.
I had a bit of a problem with it...a bad auger stud.
The grinder is still under warranty...LEM gave me the run-around and and I had to threaten a bad review of the product before they'd send me a replacement $4.49 stud.

There are differences, but in most cases I wouldn't call those differences "huge" and just because one limit is higher than another doesn't mean that the higher limit is unsafe.
