    Mennonite Farmers Sausage

I'm sorry...it's just that some folks here tend to aggressively argue false "facts" and it's very aggravating. Nothing against you personally. Thank you for participating.

    Mennonite Farmers Sausage

Yeah, that's a substitute. We're not talking substitutes here. The amount of sugar in that has nothing to do with what's in actual Tender Quick.

    The Old Ways

I've done a lot of teaching...all sorts of homesteading stuff....especially gardening....unfortunately my health isn't all that good now but I'm still willing to help folks learn vital self-sufficiency skills any way I can.

    Mennonite Farmers Sausage

There's just a very TINY amount of sugar in Morton's Tender Quick....I'm surprised that folks are able to pick it up.

    Kabanosy....

The Marianski's are father and son and where did you get your information? There's no culture in the kabanosy recipe in any of the Marianski books that I have...and I have all but the mullet and cordial books.

    Grinder

I have a LEM #12 grinder...meh!!...it's okay. I had a bit of a problem with it...a bad auger stud. The grinder is still under warranty...LEM gave me the run-around and and I had to threaten a bad review of the product before they'd send me a replacement $4.49 stud. Needless to say, I think a lot...

    #safeway re-dates their meat, I have proof!

There are no strict federal rules in terms of food dating, but some states may have specific laws, perhaps your state isn't one of them.

    Breakfast sausage question

It's impossible to answer the question without tasting the sausages that you've tasted, and what's "popular" is relative and varies from locale to locale. Having said that, Nuremberg Bratwurst is one of my favorite "breakfast" sausages. Classic Nürnberger Bratwürste Add the following to one...

    Cure uptake with immersion brining

I don't understand the argument either. It wasn't my idea. It seems to have started in retaliation to a post I made in another thread. Tests will be completed and results will be spewed (as they've been in the past)...but unless the REGULATORS are directly confronted to defend their limits and...

    Cure uptake with immersion brining

Again folks are not understanding the concept of calculable ingoing nitrite. And again...someone comes along who assumes that the regulators haven't taken the variables in account when the set the limits. This is beating a dead horse! Every so often someone comes along thinking that they're...

Prove that I don't think twice about it??? I didn't come here to prove anything.

    Cure uptake with immersion brining

Yes, I said unsafe. I would also say that the question of safety is implied.

    Cure uptake with immersion brining

It's up to you, it's your post. You posted.... And then posted... There are differences, but in most cases I wouldn't call those differences "huge" and just because one limit is higher than another doesn't mean that the higher limit is unsafe.
Great deal on LEM Grinders!
